Beetroot Mezhukkupuratti( Kerala Style)
- Thin sliced beetroot- 2 cup
- Thin sliced onions- 3/4 cup
- Sliced Green chillies- 4
- chopped ginger- 1 tsp
- Mashed garlic with mashed cumin- 1 tsp
- Turmeric powder- 1/4 tsp
- salt as required
- Curry leaves
- Fresh grated coconut(optional)
- Mustard seeds- half tsp
Directions ::..
beetroot,onions,ginger,garlic,cumin,green chillies,turmeric,salt and curry leaves in a quater cup of water in a very low flame.Once it is boiled,heat 2 tbsp of veg oil in a pan and add mustard seeds.When it splutters, add the cooked beetroot mix to the pan and shallow fry in the oil for 10 minutes and make it dry.Serve it with rice and curry.
