Aloo Baigan
- Baby eggplant – 5
- Potato – 2
- curd – 1/4 cup
- Tomato – 2
- Green chilli -3
- Garam masala – 1/2 tsp
- Red chilli powder as required
- Mustard seeds – 1/2tsp
- Cumin seeds -1 tsp
- chopped onion -1
- Ginger garlic paste – 1tsp
- Curry leaves
- Turmeric
- Salt to taste
Directions ::..
Cut a potato and eggplant into medium pieces.
Heat oil in a pan and season it with mustard and cumin seeds.Now add onion, ginger garlic paste, green chili, curry leaves and turmeric.Fry onion until light brown. Now add the chopped tomatoes and fry till the oil seperates and tomato pieces are cooked.Then add eggplant, potato, red chili powder, garam masala and salt land cook it for 10 mins. Now put 1/4 cups of curd gradually, simmer the flame and cover the pan with lid. When it is cooked, garnish with Coriander leaves and serve hot with chapati or rice.
