Aloo parata
- Potatoes: 1 pound/ half kg
- Chopped Onions: 1/2
- Chopped Green chillies: 2 nos
- Chopped Ginger: Half tsp
- Chopped Curry leaves: As required
- Turmeric powder: half tsp
- Geera/cumin seeds- 1/2 tsp
- Salt: as required
- Oil: 3 tbs
- Chopped coriander leaves – 1/2 cup.
Directions ::..
Next add onions and curry leaves, saut� it for 5 minutes. Then put cube potatoes, chopped ginger, chopped green chillies, cumin powder, turmeric powder and salt. Saut� this again for 5 minutes. Add a little water and cook it in medium flame. Then mash it well and make it very dry.
Make the chappathi dough. Roll this to a big lemon size and stuff the masala in the dough. Then Place about the filling in the center. Then gather the dough circle up around the filling, drawing the dough up to a sealed point at the top. Fold over the point and flatten the dough into a thick patty. Roll out carefully.
Heat the tawa. Then reduce the flame in medium and place the patty in tawa, spreading the ghee, slowly turn the patty in heated tawa and cook slowly. Serve this hot with yogurt.
